While this may not be an Irish recipe, the green mint dresses these brownies up for the occasion. I prefer a moist, chewy brownie as opposed to a cakey one and this recipe delivers. Top it off with a peppermint patty style topping and some chocolate glaze and the results are delicious.

Ingredients
- 2 ounces unsweetened chocolate
- 1 stick butter
- 1 cup sugar
- 2 eggs
- 1/2 cup flour
- pinch salt (only if you used unsalted butter)
- 1/2 tsp vanilla extract
Preheat the oven to 350 and grease an 8 inch square baking pan. Place the chocolate and butter in a medium saucepan and melt over low heat stirring constantly. Take off heat just before chocolate finishes melting and stir in the sugar. Add the eggs one at a time mixing until fully incorporated. Stir in remaining ingredients.
